It’s traditionally made with basil, but can even be made with other greens such as kale! Now, pesto is taking over the internet in the form of pesto eggs.
Sure, this recipe has probably been around forever, but it recently went viral on TikTok, where everyone was surprised by not only how easy the dish was to make, but how delicious these herby eggs were! In essence, the dish consists of just two ingredients: Pesto and eggs. Sounds easy, right? That’s because it is. Naturally, you can make it more fancy if you wish. You can add red pepper flakes for an extra kick of flavor, or you could add complimentary ingredients such as ricotta cheese or, really, anything you want!

What makes pesto eggs so nice is that they’re not only delicious, but also customizable. The Kitchn notes that the amount of pesto you use is completely up to you. You simply spoon however much pesto you want into a frying pan and warm it up. Delish notes here that you want to heat it up until the oil in the pesto begins to glisten and separate from the green part of the pesto. This will mean that it’s warm enough to add your eggs. Then, you crack your eggs — again, however many you want — onto the pesto and let them cook on the hot bed of herby goodness.
According to The Kitchn, pesto eggs are traditionally cooked sunny-side-up, meaning you won’t flip the eggs part way through cooking. To ensure an even cook for sunny-side up eggs, make sure your heat isn’t too high. You don’t want the bottom of the egg to scorch before the top is cooked. Delish recommends drizzling honey over pesto eggs, and most people eat them either over toasted bread or accompanied by bread. “These were delicious. There’s no way around it,” The Kitchn’s recipe tester said.
