Always struggling for lunch and dinner inspiration?
A health coach from Australia has shared her ‘easiest’ meal prep recipe.
Tayla Bubeck, from Sydney, explains her healthy vegetable frittata can be ready in under 60 minutes and is super simple to make – requiring just a few fridge and kitchen cupboard staples.
What’s more, she says it can easily serve you five working week lunches.
Posting on her Instagram, Tayla wrote: ‘This is the easiest meal prep you’ll ever do, and yummiest regardless of looks – trust me.’
To make the frittata, you’ll need just five ingredients – an onion, cherry tomatoes, mushrooms, parmesan cheese and egg whites.
After all the veggies are chopped and coated in egg (with parmesan on top), the frittata takes just 40 minutes in the oven.
It’s then ready to be sliced up into portions for lunches or dinners throughout the week.
After sharing the recipe on her Instagram, Tayla has been inundated with people praising her dish.
One person replied: ‘Stop it, this looks amazing.’
Someone else said: ‘Yes love these. My kids love a zucchini and bacon one!! They will eat it zero complaints.’
While another added: ‘Genius, am making this this week.’

- One onion
- Three handfuls of cherry tomatoes, chopped in half
- Three handfuls of mushrooms, chopped
- 8-9 egg whites (and yolks if you want), whisked
- Parmesan cheese
