Five easy soup recipes for 50p a portion

January is the perfect time of the year for soup – it’s cheap, healthy and warms you up during cold weather.

While you can buy tins or fresh tubs of the stuff, making it yourself gives you more variety, keeps costs down and means you know exactly what goes into it.

We’ve got five recipes which all serve four, and cost around 50p per portion.

You will need a few store cupboard essentials, including vegetable oil, vegetable stock cubes, salt and pepper.

If you don’t already have these, it should cost under £5 total and you can use them again and again.

We’ve used the Tesco website to come up with these prices but your favourite supermarket might have different prices.

Buying loose veg means you can buy exactly what you need but if you plan to make more than one recipe with he same ingredient, it might make sense to buy a larger bag.

You will need a large saucepan and four of the recipes require a blender, which is a good investment if you want to make soup at home.

A stick blender is best for soup as you can use it in the pan where you cooked it, but a smoothie blender or food processor will work too – you may just need to blend it in a few batches.

Vegetable

Ingredients (for four portions)

  • 1 tbsp vegetable oil – 2p (£1.10 for 1l)
  • 1 onion – 10p
  • 3 carrots – 12p
  • 2 parsnips – 25p
  • 1 whole head of celery – 50p
  • 1 leek – 40p
  • 2 vegetable stock cubes – 10p (50p per box of 10)
  • Black pepper

Total cost= £1.47

Cost per portion= 37p

Method

Carrot and coriander

  • 1 tbsp vegetable oil – 2p
  • 450g carrots – 19p
  • 1 onion – 10p
  • 1 tsp ground coriander – 85p per jar
  • 1 potato – 25p
  • 1 litre vegetable stock made with one stock cube – 5p
  • Bunch of fresh coriander – 70p

Total cost = £2.16

Cost per portion= 54p

This decreases to 33p per portion once you buy the coriander jar as one teaspoon costs about 2p.

Method

Potato and leek

  • 3 large leeks – £1.20
  • 1 medium onion – 10p
  • 1 large baking potato – 25p
  • 2 tbsp vegetable oil – 4p
  • 800ml vegetable stock made up from one stock cube – 5p
  • 250ml milk – 17p
  • Salt and black pepper

Total cost = £1.81

Cost per portion = 45p

Mushroom

  • 1 tbsp vegetable oil – 2p
  • 1 onion – 10p
  • 750g mushrooms – £1.64
  • 2 garlic cloves – 25p per bulb
  • 500ml vegetable stock made from one stock cube – 5p
  • 100ml milk – 7p

Total= £2.13

Cost per portion = 53p

Spicy parsnip

  • 1 onion – 10p
  • 2 cloves of garlic – 25p per bulb
  • 2 tbsp vegetable oil – 4p
  • 1 tablespoon curry powder – £1 per tub
  • 6 parsnips – 40p
  • 500 ml semi-skimmed milk – 34p
  • 750 ml organic vegetable stock – 5p

Total = £2.18

Cost per serving = 55p

Reduces to 31p per serving once you have bought the curry powder
